In recent years the newly emerging Pink Bourbon varietal has been one of the most celebrated coffees in green coffee and barista competitions. It was initially thought to be a rare and spontaneous mutation of two titans of the heirloom variety pantheon, Red and Yellow Bourbon. However, recent tests have shown Pink Bourbon is likely an Ethiopia Landrace type. And this truly shows in the complex fruit and winey cup profile which is unique from most other coffees from Colombia with the notable exception of the Geisha varietal--which is definitely of Ethiopian heritage.

Our Pink Bourbon Natural lot comes from Finca Bruselas. The farm has been a part of the Gaviria-Botero family for 70 years now covering three generations of coffee growers. It was originally purchased by Milton Gaviria and Fabiola Botero seven decades ago and has always been dedicated to coffee cultivation. The farm is located at the foothills of the Andes Mountains  in Armenia, Quindio near the Quindio River and has a centralized wet mill operating on-site. Our lot was processed in the full natural process. Instead of removing the pulp and mucilage from the coffee cherries in the conventional washed coffee process, the coffee is rinsed off only and then immediately set out to dry in the sun while still in cherry form. The beans receive flavor from the fruit pulp and sugars as part of their development and many flavors and characteristics are imparted onto the coffee bean. Naturally processed coffees are known to have a heavier mouth feel, lower acidity and distinct fruity characteristics.

Our light City Roast brings out marmalade, ripe fig, and dark chocolate notes in a shifting and complex full bodied cup.
